We's been havin da Major League zoomies - da weather has ben makin us all crazy! It's been rainin tons and now it are droppin below freezin - looks like da peeps ain't goin anywhere tomorrow since we's sposed to get ice. Good thing dey went to da store and picked up tons of Fancy Feast today. And even better dat dere are bacon in da fridge - I'm hopin for some Snow Day bacon!
A couple of y'all asked bout da coffee toffee bars da peeps so rudely refoosed to share. Here are da recipe:
Coffee Toffee Bars:
1 cup (2 sticks butter)
1 cup brown sugar (firmly packed)
1 tsp. almond extract
2 1/4 cups sifted flour
1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 tbsp. instant coffee
6 oz. semisweet chocolate morsels
1/2 cup chopped pecans
Preheat oven 350ยบ. Blend together butter, sugar, and almond extract in mixer. Gradually add instant coffee, flour, baking powder, and salt. Stir in chocolate morsels and pecans on low speed. Press dough into a greased 13" x 9" pan. Bake for approximately 25 minutes. Top with chocolate glaze. Cut into bars while still warm.
Chocolate Glaze:
Melt 2 tbsp. butter and 2 oz. unsweetened chocolate. Mix 4 tbsp. of hot milk with 2 cups sifted confectioner's sugar in medium bowl. Add a dash of salt. Pour in the chocolate mixture gradually, stirring until smooth.
Now here's a warning - dese disappear fast (speshully round here). Da mommas said dey might be doin some more Snow Day Bakin tomorrow too!
